For the lamb gyro meat:

1 pound ground lamb
2 teaspoons garlic, minced
1 teaspoon rosemary leaves
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon crushed red pepper

Cooking Instructions

To prepare the lamb gyro meat: Preheat oven to 450 degrees.

Combine lamb with the garlic, rosemary, oregano, salt, and crushed red pepper. Knead the mixture until it is quite smooth, like a paste.

Form the mixture into four mini loaves.

Place the loaves on a baking sheet and bake for about 15-17 minutes. Cool for 5-10 minutes before thinly slicing.
