2oz julienne mushroom
5oz white wine
7fl oz demi-gloss
1 cup tomato sauce
1/4 cup of white chicken or white veal stock
2 tblespn cure ham
1 tablespoons of jullienne truffles

Cooking Instructions

1. simmer mushrooms in wine.

2. strain the wine and save the mushroom.

3. return wine back to pan and reduce by half

4.add glace, tomato sauce, and stock and simmer for 5-10 minutes.

5. strain the sauce and finish it with the mushrooms, truffles, and ham
